Recipe alert: Summer quinoa salad


This recipe is the perfect summer meal as it can literally be served at any occasion. Whether you are looking for a great alternative to the boring green salad at your next BBQ party, or you need to load up on your protein intake after a long hike, or you simply need to prepare a quick lunch to go... Then this dish is for you... and did I mention that it's also super easy to make and it doesn't require any fancy ingredients either? 
You can completely customize this recipe to your taste too - If you don't like a certain vegetable or want to add another ingredient, then please be your own chef and chop away! After all, it's you who is going to enjoy it!

Ingredients
(makes 4 servings)

1 cup Grain's Canadian golden quinoa, rinsed and drained
1 tsp sea salt
2 cups of water
1 yellow bell pepper, cut into small cubes
2 carrots, cut into small cubes
2 mini cucumbers or 1/2 English cucumber, cut into small cubes
2 spring onions, finely chopped
2 radishes, finely sliced or cut into small cubes
1 handful of cocktail tomatoes, halved
1/2 avocado, cut into cubes
1 handful of fresh parsley and/or mint, finely chopped

TIP: When I cook, I always try to use all colours of the rainbow; It's not only visually appealing, but you also increase your intake of a wider variety of vitamins & nutrients. 

Summer dressing:
(makes approx. 1 cup)

3 Tbsp extra-virgin olive oil
1-2 Tbsp apple cider vinegar
1 Tbsp soy sauce
1 Tbsp Dijon mustard
1 Tbsp lemon juice
1/2-1 glove of garlic
Sea salt and pepper to taste
1 summer fruit of your choice (nectarines, peaches or apricots are great)

Optional add-ons:
You can add some chopped fresh fruits (preferably the same you choose for your salad dressing) or toasted nuts & seeds, such as almonds, pistachios, pumpkin seeds, to your salad. 

Instructions:

1. In a medium saucepan, bring water, quinoa and salt to a boil, reduce to a simmer, cover, and cook for about 15 minutes.
2. While the quinoa is cooking, cut all your veggies and herbs and place them in a bowl. 
3. Blend all ingredients of your dressing in a food processor until smooth. 
4. Add the cooked quinoa and dressing to the chopped vegetables and herbs and mix until all ingredients are incorporated.
